    I'm sure there's some recipes online but I found mine in the South Beach Diet cookbook.

    For Easter my plan was a 1/2 batch of regular carrot cake (fattening)...might cut 2 pieces for DH & I to freeze & munch at a later date. A flourless cake too - hopefully that DH & I could eat.

    Anyone have one? Are they any good? I bought Stevia today for baking (as opposed to the drops or packets)....

    There was one on here with zuchinni and carrots. It was amazing. Just do a search for the receipe.
