Well, you can do what you want but Dr. S doesn't say anything at all about weighing vegetables and he says you can have any size apple, that one large one is better than two small ones.

i just went with what kevins book said on the servings, handful of veggies each meal, with the friut i did 1/2 lg grape fruit,6-10 strawberries depending on size and i chose to go with small apple. but we all seem to have had equal amt of success with what we did, so take your pick i guess. : - ) also all i like from veggies is cucumbers, tomatoes, and romaine lettuce or baby spinach, dont like the spinach or lettuce with out anything either, what helped me was throwing my meat on it and mixing each bite together, now i kind of like it lol

By all means, don't pass on the seasonings! There are a huge number of spices you're allowed to have, plus don't forget your lemon juice, stevia, and cider vinegar! Between those items, you can make some lovely protocol compliant salad dressings. Take your allowed protein and cross slice it thin, then saute in water till tender, then toss on top of your salad with a nice dressing and it won't feel so austere. I did that a lot with my veggies, particularly the lettuces because I too, hate plain salads.

Also, celery, while you might not like it plain, makes a great soup with the beef tossed in. There really are options that are diet compliant and still taste good!
