I'm supposed to have my last injection a week from tomorrow and starting p3 on the Monday before Thanksgiving. (ok, is it monday or sunday??) Anyway, the more I think about it, I wonder if I should keep going with p2 to get through Thanksgiving. After reading these posts, I'm thinking that p2 is actually easier than p3. I'd hate to have to do a steak day on thanksgiving. Grammy, you said you were going to have your last dose on Friday. Does that week of Thanksgiving make you nervous? By the way, I received my Almond Flour from Honeyville today!! I know I shouldn't have mug cake on my first day of p3, but I don't think I'll be able to wait!

That's what I'll be doing too, Wendy! Really close. I wait the 72 hours, not 96. I have had no trouble stabilizing. I'm not nervous because I have a plan. I'm going to make a mug cake for my dessert, some almond flour rolls and some cauliflower "potatoes" as well as lots of turkey! :-) I might even end a day or two before that if I make it into the 160s by then. Praying I do!

Colleen, is the recipe for almond flour rolls on elanaspantry? Do you need to slowly add foods for p3 even though it's not your first round. I'm guessing you already know what your sensitivities are so you can dive right in. I'm going to do the 72 hours too then. Bring on the cheese!!!

I called them rolls but it's this recipe for Bran Muffins below. Last round, I dove right in. :-) Plan to try that again.

Gluten Free Bran Muffinsprint friendly recipe
    ½ cup blanched almond flour
    ½ cup flax meal
    1 teaspoon baking soda
    ½ teaspoon celtic sea salt
    6 dates
    3 eggs
    2 tablespoons olive oil
    ¼ cup water
    ¼ cup sesame seeds
    ¼ cup sunflower seeds
    ½ cup raisins
In a large bowl combine almond flour, flax meal, baking soda and salt
In a vita-mix blend dates, eggs, olive oil and water on high speed until very smooth
Mix wet ingredients into dry, then stir in sesame seeds, sunflower seeds and raisins
Spoon batter into lined muffin tins
Bake at 350° for 20-25 minutes
    Cool and serve
