    I haven't had much luck with the almond bread recipe I tried. it was pretty dry. :-(

    I had something similar at cracker barrel today. Grilled chicken with sauteed green peppers and topped with melted swiss cheese. They have a whole section of their menu marked "LowCarb Options". So it made it easy. Had a side salad to go with it.

    Aww shucks! I hope I can make a decent one. It was weird when I added the coconut oil it started to harden when I was mixing it with the eggs

    I found these basic substitutions for dried herbs, thought I would share it! They say if you use fresh herbs in recipes then it tastes so much better...flavor is highly desired in P3!

    Basic Substitutions for Dried Herbs:
    Use: If the recipe calls for:

    1/3 C fresh onion - 1/4 C onion flakes
    1/2 t minced garlic - 1/4 t dried garlic
    1 clove garlic - 1/8 t garlic powder
    1/2 C bell pepper - 1/4 C dried bell pepper
    1/2 C diced celery - 1/4 C dried celery flakes
    1/2 C celery, onion, peppers or carrots - 1/4 C mixed vegetable flakes
    1/2-1 C parsley - 1/4 C dried parsley
    1/2 C chopped fresh ginger - 1/4 t ground ginger
    1/4 C chopped mint - 1 t dried mint
    1 t lemon or orange peel - grated 1 t dried orange/lemon peel or 1/2 t extract

    Colleen - question - I am trying my first recipe with agave nectar (I'm trying to enter P4). Do you find that agave nectar is as much of a problem as sugar in P4? I'm reading up on it and it says it has a low glycemic index so I'm thinking it is safer. Also, if i want to use Stevia powderin recipes that call for agave nectar - do you substitute water for the liquid lost? LA

    So you use it freely -- I am trying a cupcake recipe from Elana's site and it calls for 1/2 cup agave nectar -- 12 cupcakes. Everything else is friendly in the recipe. Just wondering if I have to be careful with them or can I eat happily. LA

    Mel - I posted the almond bread recipe spread on cookie sheet, you can spread it thicker if you need to. After you bake it you cut it into bread sized peices. When you store it, make sure you put some wax paper or foil in between peices cuz it sticks together in fridge. I have an almond flour recipe book at home, I will bring to work tomorrow and see if there is a better recipe. The loaf type tend to be dry though, good for stuffing.
